Cupcakes have gone all sticky/soggy on top? ?

I make cupcakes for a living. Sometimes the tops get sticky from the reasons you stated. As long as they are cooked through (stick a skewer in it or tap the top and if it bounced back it's cooked) they don't need to go back in the oven, just ice over it.
