What sort of sandwich platter should I make?

I would do the second one. Allow people to pick their own bread and cheeses and meats. You can do a bowl of egg salad and tuna salad and chicken salad too. Along with different deli meats. People can add to it mayonnaise and mustard and be happy with what is in their sandwich. It's really easy to just make them too if you get rolls similar to hot dog rolls or burger buns.
