How to make Runzas/Bierocks ahead?

Make up our cooked beef and other fillings and let them cool completely, then fill the dough and assemble the sandwiches to bake the next day. The flavors of the filling will have time to meld, and you'll get a good development in the dough letting it refrigerate overnight, so the whole thing will taste better, especially since you're baking it fresh the second day.
